A really interesting take on how great coaches think here by Talent Code author Daniel Coyle. Daniel postulates that great coaches aren't thinking about the gold medal performance or the wonder goal, they are thinking about all of the little things that may have contributed to the gold medal performance or the wonder goal. It is suggested that great coaches are concerned with the building blocks of performance more than the performance itself, it reminds me of the old financial saying, "take care of the pennies and the pounds tale care of themselves".
